Secrets of a Jewish Baker - WOW
At last I know some secrets. What a treat! Greenstein has the soul for baking and joyously imparts it.
Recipes are well indexed, concise, readable, and easy to follow. Very helpful illustrations provided for challenging procedures--folding hard rolls, rolling croissant dough, etc.
