    Retains a sharp edge better than stainless steel alloys
    After nine months of kitchen service, this knife has performed very well at preparing a variety of vegetable (99% of the tasks where this knife is used). I sharpen my own knives and have noted a superior ability for this knife to hold a sharp edge over the stainless steel alloy knives also used in my kitchen. The carbon steel is starting to discolor from the various acids and fluids it encounters however, this is a tool, not a piece of art. I have noticed my wife now uses the carbon steel Japanese knives when preparing meals because of their reliability in having a sharp edge. Some coaching may be necessary to educate users on the proper care of carbon steel, but this usually isn't a problem if they know a little effort will keep these tools sharp.

    Mission accomplished.
    Mass flow sensor was installed in a 2001 Jaguar XK8 to clear an engine warning light for low intake temperature. The sensor cleared the engine warning light and no changes in engine performance have been noted after two months. The sensor has a QA checklist included in the box. The cost is $160 less than the OEM price. I know you get what you pay for however, I can justify replacing the MAF more frequently (if needed) due to the low cost and simplicity of the repair job. If a MAF failure resulted in leaving me stranded on the highway, my decision would be different. In this case, MAF failure will still allow you to get home.

    Japanese Santoku Kitchen Knife TERUHIDE Wooden Handle Carbon Steel Made in Japan

    Kitchen Workhorse
    My Santoku is over two years old and it is still used daily. I sharpen it at least twice a year and maintain a 17 degree angle. A patina is developing on the surfaces of the metal to give it an appearance of a work tool (in contrast to the shiny museum pieces it hangs next to on the backsplash). I have needed to epoxy the bolster back onto the wooden handle once, but I am still very pleased with the knife. The length of time it can hold an edge is it's greatest asset in my opinion.
