A Must-Have for Bakers!
Although I've baked many pies over the years, I had never heard of this until I watched a British baking program. Not only does it keep juicy pies from boiling over, it helps to raise the center of the crust so the crust doesn't get soggy. I made a turkey and ham meat pie with lots of sauce in a 10" square pan, and the top crust (a puff pastry) came out beautifully! Just to be sure, I did put a baking sheet on the next rack down under the pan, but there was hardly a spot on it, so no over bubbling to mess up my oven. This is made of thick ceramic and would probably break or chip if dropped, but I keep it in the box when not in use. This is a very simple yet extremely effective (and inexpensive) tool for making your pies look professionally baked!
