Great indoor smoker: quickly produces intense smoky flavor
It's very easy to get intense smoky flavor indoors using this pan, from veg to trout to meats--much smokier flavor than a regular outdoor grill in the same time--without drying them out unless you want to do so. Texture and flavor of the food are excellent. Just a couple of tablespoons of wood chips does a full pound of fish, veg, or meat; you also can add tea leaves for interesting additional flavors. The smoke stays almost entirely inside the pan except when you lift the lid to check, which is good since it's inside. I run my stove-top fan (an old one--not a high velocity one) and haven't set off a smoke alarm yet. When I need two layers, I just add a stainless steamer rack on top and it works well; you only need a small amount of air space between the layers for the smoke to circulate. The smoker insert (wood cover) WILL get permanently dark on the side facing the wood chips, and the inside of the bottom pan will discolor slightly over time but the exterior can be kept a glossy stainless if you care and the smoker insert (chamber) and smoking rack both fit nicely in the dishwasher.
