If you want to save your health and the environment...
This book shows how eating a plant-based diet is the best thing for your health and for the health of the planet. Lyman shows how the meat industry cares more for their profits than they do the safety of the consumer, and there is little government oversight of the industry. After reading the chapter on Mad Cow Disease, I knew I would never eat beef or venison again. By the end of the book, I was a vegetarian and on the way toward being vegan.
He also shows how the raising of all kinds of meat is destroying the Earth. Water is wasted and polluted, the rain forest is being destroyed, animal waste is releasing greenhouse gases, and the grain that's fed to animals could be feeding the hungry of the world instead of the meat going to feed already overweight people.
I have bought three copies of this book so far in order to lend them to friends who are wondering about how to lower their cholesterol or how to lower their carbon footprint. After reading this book, my 82 year old dad said, "For anyone considering being vegetarian, this book makes it easy."
The worst thing about the book is that it was written in 1998, so some of the information is out-of-date. For example, at that time no cases of Mad Cow Disease had been found in the U.S., but since then 3 cases have been reported. Howard Lyman has written a second book, No More Bull, which brings things up to date, and in that book he also discusses the dangers of high animal protein diets.
I highly recommend this book. I wish everyone in the country would read it.
