Keeps string clean
Is the string supposed to feed from the center? The picture on the box would have you believe that. I couldn't find the end in the center after much looking so it's feeding from the outside. The nice little stainless steel holder keeps the string from getting messy in the junk drawer. Food grade string is good for tying up roasts and steaks. It helps keep the meat an even thickness .
