A fine instrument.
2 of 2 found this helpful This knife is extremely sharp and holds its edge well. I'm kind of afraid of it--but so are the vegetables, which do not dare disobey me.
Never before have I seen such meek obedience in green onions. They do as they are told. It is not difficult to cut them very finely and precisely. The relatively small amount of pressure necessary to cut prevents deformation, and deformation is what limits how finely something can be chopped or julienned.
If you slice vegetables every day, you should do it with a good knife. This is a good knife.
