Light weight, ergonomic, comfortable handle.
These are my go to knives. I do own Kramers, Shuns, blue steel japanese knives, a couple of handmade hand crafted custom knives but, because of the value, edge retention, and the comfort of the handle, these are my work horse in a professional 5star kitchen I'm working at. I do have their forged knife and it also preforms well but, because knives are always being borrowed or lent to or other people are just curious of the knife, I wouldn't have a problem letting them borrow these set. I have an almost complete set of the prodigy (at least the knives that I need) and 3 of the forge one. This set only comes with 4 essential knives and my other pix contains my other knives (so that you don't think I'm bsing, these knives are just my usual everyday sets I carry with me. I have a problem, OK.
