I love the thorough research and time put into this book!
3 of 3 found this helpful Since I have been gluten free for almost 30 years I have tried hundreds of recipes myself and was delighted to find out that the folks at America's Test Kitchen had invested their considerable efforts in testing and comparing different baking techniques and flours. I love the comparisons presented and the pictures that show the results achieved by using slightly different flours and even brands of flours. They have also tested and reviewed commercially available gluten free products and endorse only the ones that passed extensive taste testing. That saves the reader from trying out the many disappointing gluten free products on the market. I also like the technical explanation provided with each recipe that tells why each ingredient is used and what it does to make the final product better. All this info will help in adapting other recipes outside the book and understanding the principles of gluten free baking. Thanks, American's Test Kitchen for the countless hours you have invested in this book!!!!

Much better than I ever expected!!
This was an exceptional deal! Since these are so inexpensive I wasn't expecting them to be so good. I really was looking for the cuticle pusher since I had trouble finding one. The ones I did find were ten or twelve dollars so I figured even if the clipper was no good I was getting the cuticle pusher. The Nippers turned out to be good quality and are very sharp. They are much better than the ones I have been using for years!
