Actually I was looking to replace my old and battered paperback by Mr Beard called 'The James Beard Cookbook'. This cookbook has fewer recipies than the other, and expects you to know how to cook 'fancy' already! Nothing wrong with it, my mistake in buying it. On the other hand, I did find an excellent, hard cover used copy for $5 which is a great bargain!

I already owned "James Beard's Theory & Practice of Good Cooking" which is just as much or more a teaching book as a cook book. Therefore, I wanted to own a James Beard book with more recipes than education and boy did I ever get just that. This book has 1,000 recipes that have been updated to be more healthful than previous ones. It is chocked full of wonderful recipes with meats, poultry, fish, vegetables, fruits, and everything in-between. Plus, there are plenty of breads, sauces and desserts. There is a lot of good commentary and explanation of the foods used in the book which is very helpful. The recipes are nicely laid out with an explanation of each at the beginning, then the ingredient list, followed by the instructions which are so explicit you think James Beard is right there in the kitchen with you showing you the way to a perfect result. The book was in excellant condition and it was a book i didnt have.I think James Beard was more important than any other american chef except maybe Julia Child.He seems to have been forgotten in this day of t v chefs.I hope in the long run he will be remembered.
