I have only adjusted a few of my "habitual procedures" so far, but have been smugly satisfied to read that Ms Julia uses the same process to cut onions as I have been doing for almost 40 years, and not the wasteful and more difficult way I see on almost all expert cooking shows. Now I can stop critisizing these TV chefs over my PET peeve. I have so much more to study/learn and I can skip around to what I'm interested in at the moment. I've worked as a cook, sous-chef, and chef, but for the last couple of decades have been a simple world traveled and taught gourmand. The "Joy of Cooking" has been my bible in my extensive collection of cookbooks and culinary encyclopedias. I've stupidly (and shamefully) avoided Julia simply because of her TV voice and posture. How foolish I've been, and I'm a bit of a French snob having been born there. Just goes to prove that you can teach an old dog new tricks, and I'm learning with the turn of each page. Thanks to the fine providers on E-Bay I've availed myself of both volumes and am looking at Julia's other missives. I made the Beef Bourgonon this past week and all I can say is .... yum. The book is broken down so that even the weekend cook can figure it out. I messed up a bit and put the mushrooms in too early, but it still turned out. Next time I will get it exactly right. It is a huge book and I wish it had more recipes, but then I can always get the other volumes. It was a bit pricey, but that's just because of the movie Julie & Julia, and as of today Meryl Streep's Golden Globe Award for her wonderful role. I must admit I had been trying to buy a different Julia Child recipe book and have been outbid almost everytime for the book. I switched books when I saw the movie, because this was the one used in the movie. I'm going to try another beef recipe and maybe a cake this week. I have been waiting to get my hands on a copy of this book for quite some time. It is a shame that USPS left it out in the pouring rain when they delivered it, but I was able to save it, for the most part. Julia's writing, explanations, and enthusiasm can clearly been seen and read through the pages. It is a wonderful book and an amazing part of culinary history.

Julia Child's recipes are simple and produce flawless delicious dishes. I have oher Julia Child's cookbooks but this one has the most recipes. The recipes utilize simple ingredients that can be found in any grocery store.
