The author gives background information about different types of ingredients and why certain cheeses are used. She also provides suggestions for alternative flavors. I have used this as a foundation for making cheesecakes (always a holiday favorite) and adding my own spin on the cake. Although people think this kind of cake is difficult to make, it is actually pretty easy. This book was my introduction to making cheesecakes and I always get asked to make one for friends on special occasions.
