GREAT cook-book - and ii's all bout New Orleans food - and that's where I live - but these are much easier for home cooking than the four star restaurant recipes (which I also have) because ii uses mainly easy to find ingredients (Okay, the alligator tail may be a bit difficult to find).

I was "Not At All Impressed" with "Emeril's New Orleans Cooking" cookbook. Nothing about this book was compelling. Rather than illustrate photos of the completed recipes, there are drab, dull colorless photos of scenes in New Orleans throughout the book -- the only photos of dishes are on the paper book cover -- on the back! I wasn't interested in purchasing a commentary on the locale of New Orleans, I was interested in New Orleans recipes and perhaps seeing at least "1" photo of most recipes after completion. In addition, Not One of the Recipes stood out as something special that I might want to try -- "Not One!" I would Never Recommend Purchasing this book.

If I only had one cookbook on Cajun c and Creole cooking - this is the one. All the classics of course, BUT more importantly, ALL the prep info. How to make the various rubs, flavorings, broths, etc. Starts with the basics and takea you to the complex. Roux is snap with these instructions. Buy it - you'll LOVE it!!

I have borrowed a friend's copy for years and have always wanted the book. The book was received timely and it was in fantastic shape. I spent a couple of hours reading each and every recipe. I live in New Orleans and also enjoyed the history of the recipes as well.
This was just a gift for my daughter who is graduating and her birthday is coming. She is going away to culinary school soon, so i figured to get her one of her favorite chefs books, autographed and a volume 1.
