In order to enjoy this coffee you need to know how to make it. This is not the kind of coffee you put in a regular coffee maker. You need a Cezve. I prefer to make it this way. I am sure its not the correct way, but this is how I like it. I can't drink this coffee without sugar. Even if you like your coffee black you may want to try it this way. 1. I fill 2 espresso cups with water. This is how I measure. 2. I spill about a 1/4 of the water from one of the cups into the cezve. 3. I add a tablespoon of sugar. into the cezve. 4. I heat cezve on high heat until sugar water is completely dissolved and boiling for a while. I wait until sugar turns yellow or gets thicker. This is important to get a nice foam. 5. I add the water from the espresso cups, and add 2 spoons of coffee. Do not stir. 6. Back heat down to medium high( electric stoves). I dont have gas so I have no idea how to instruct for that. 7. Watch carefully, it will rise suddenly and make a mess if you are not careful. You need to be quick and steady. 8. When foam rises to the top spill off foam in to the cups. Repeat this until there is no foam. This is the tricky part. 9. Enjoy. best to sip foam off top first. The grinds fall to the bottom and you do not drink those. It takes practice to learn how to enjoy this coffee. I usually pour all the foam into one cup and drink it if alone. I have tried to do just one cup but this is the only way I seem to get it right. If you are looking for a nice and different coffee the Mehmet Efendi Coffee is one to try. . Making a cup of coffee with this is very interesting if you follow the traditional Turkish method. You will have to look up on the internet for that method. Be sure to follow the directions as this coffee is very finely ground if you use the regular full pot method.
