This is one of our family's favorite cookbooks. We've got so many bookmarks in it, it's ridiculous! And we've shared the book with many friends and family who have bought it also. In fact, that's why I bought two more of it. Some day our copy will wear out and we want to have extras on hand for ourselves or to give to another friend or family member. The book truly lives up to it's title--we eat well quickly when we use it. The recipes are delicious and easy to make. Our favorites are Spice-Crusted Chicken Breast, Basmati Rice with Raisins & Cashews, Pork Medallions with Port-&-Dried-Cranberry Sauce, Potato Galettes, and Flounder alla romana (it's a parsley & caper sauce which is AWESOME on salmon). These have become staples in our home and our 12-year-old loves them all, too. Their sauces are savory delights. My husband has done the pork medallion recipe for a Men Who Cook fundraiser and gotten rave reviews. One thing we've learned from this book is that you can basically broil just about anything, 5 minutes on each side, and it's savory, juicy, delicious. What a time saver! Plus, we've simplified some of the recipes, finding some of the steps not necessary for our household, but we basically stick to what's written. FYI--It's mainly the spice-crusted recipe we've changed. We just cut the chicken breast in 1/3s, skip the pounding, coat the meat in oil and toasted spices, and broil it. We also cut the pepper in half or more, cut the salt in half, and note to never skip the salt. But this is the recipe we've used over and over for ourselves and company. It's consistently loved! I subscribed to Eating Well in the 90's the first time around before they stopped publishing. I have many old magazines and several of the cookbooks and love them. No recipe I have made is bad. Rush Hour is great because its quick, easy and does not use strange grocery items you cant find. Highly recomment you try it, you wont be disappointed.
My daughter bought it for herself. I made most of the recipes for her freezer when she gave birth. The recipes were easy, fast, and delicious. The pictures helped. So I bought one for myself. Quite a nice little cook book!
