good to use with venison meat
My mother used this in the past and I have also when my children was young, but my husband has been hunting alot & this year and I wanted to try some other ways to prepare (venison) deer meat. The rule of thumb with this Tender Quick is 1 Table Spoon per pound & I found out if the recipe calls for more salt, don't use it, because it will be extremely salty.
When the Tender Quick arrived I had about 80 pounds of deer burger, I made, delicious summer sausage, some beef sticks, and I altered a recipe from on line and mixed the burger with the spices to do like a corned meat. I do alot of pressure canning so after curing the mixed up burger a few days in the fridge, I put it in jars and canned it up in pints and 1/2 pints. I could not wait to try it so a few days later I opened a small jar. I diced potatoes put them in a skillet and fried them to almost done.I then took the meat from the jar and broke it up in the skillet to small pieces with the spatula & fried till brown. It tasted like the most delicious hash I ever eat. It will go well with eggs for breakfast but we like to eat it with some home made pork and beans, what a meal.
