I recommend the above knife sharpener because it is a very quick way to keep a sharp knife sharp. It is inexpensive to buy and works very fast and easy. It sharpens both sides of the blade at once. Another important feature of it is easy to take the crock sticks out and clean them with the Lansky eraser block they sell. I own three of them and like them very much. Only problem I have ever had is after much use the plastic clamps that hold the mini crock sticks in place can get tired and not hold the stick as it should. I fixed the problem by cutting off the end of a wooden match and glued it in the bottom of the slot to keep the mini stick from sliding down out of place. Worked great. I would also say that this system is not for a really dull knife, that is what I mean about keeping a sharp knife sharp. This is great for maintenance as is much of ceramic sharpening. The red Lansky pocket crock stick is a very handy efficient way of keeping a sharp knife sharp. If your knife is truly dull than it will require another way of sharpening your knife such as stoning it on a Norton & Novaculite bench stones. These two require skill to sharpen a dull knife but in my opinion are the best way to sharpen a truly dull knife. However the Lansky pocket crock stick does not require skill, it is easy to use and easy to keep clean. All you do is draw your knife though the V at the bottom and it sharpens your knife on both sides with each pass of the knife. When the ceramic sticks get loaded with the small about of metal from sharpening all you do is remove them from the red plastic base and clean them with either a Lansky eraser or use common cleanser like comet. I prefer the eraser since it is faster and all you do is wash out the eraser when your done with a green scrubbing pad on all sides. Using the eraser makes it easy to clean the ceramic in the field where you may not have access to water at the moment. So to sum it up if your knife still has some edge and not totally dull I recommend the above system. Fast, clean, easy, handy, inexpensive.Read full review
