    Recover taste and texture when you lose gluten as the glue

    Basically, unless you know what you are doing, most gluten-free cooking is a miserable thing to inflict on your friends and loved ones. Given a choice, serve MRE's instead of serving gluten-free. Not that MRE's are gluten-free, but they certainly taste a whole lot better. One thing about most gluten-free cooking is that the recipients will definitely lose weight from pushing the plate as far away as possible. Or, get this book and follow the recipes exactly to turn wonky-tasting funny-feeling cookery into gastronomic wonders. I purchased this for my spousal kitchen unit when she finally admitted she had no idea whatsoever how to make gluten-free meals worthy of serving. This confession came from a woman who is a master in the kitchen with gluten. Bottom line, she has been using this book as her Glutenberg Bible; and from the perspective of the guy at the table I must say the quality of my life has taken a quantum leap for the better. One nice thing about this book is it explains the "why" behind specific steps and ingredients that are to be used. As a final BTW for meat-eaters, you also want the words of wisdom found in The Cook's Illustrated Meat Book. Same company, same magic instructions. Naturally, there are gluten products employed in the Meat Book, but don't despair. Between these two books you will be running salivating to the table when you hear "Gluten's Gone, Food is On!"

    Gluten free attempts

    I'm a big ATK follower & thought their Gluten free cookbooks would be #1. First off, I had to spend over $30 to buy all the ingredients for their "flour blend" which seemed to be used for every recipe I checked out. I was interested mainly in the cookie & bread sections. None of the breads turned out because the person with allergies also cannot have dairy & eggs. (Not the books fault.) Also tried making some cookies and figured I was just as good off using my old recipes using the measure-for-measure flour. Maybe the main dishes would have impressed me more. Until someone comes up with a gluten free flour that has the texture of real flour - these gluten free recipes will always turn out the way they do.

    Love this book. It's easy to read and understand. The authors talk to you as if you were standing right next to them. There is a lot of research and explaining done to write this book and their testing all the different flours and methods makes these recipes trusted and delicious. I use this book like a bible and have ordered the second edition of the same title as well. Highly recommend this book!

    Since I have been gluten free for almost 30 years I have tried hundreds of recipes myself and was delighted to find out that the folks at America's Test Kitchen had invested their considerable efforts in testing and comparing different baking techniques and flours. I love the comparisons presented and the pictures that show the results achieved by using slightly different flours and even brands of flours. They have also tested and reviewed commercially available gluten free products and endorse only the ones that passed extensive taste testing. That saves the reader from trying out the many disappointing gluten free products on the market. I also like the technical explanation provided with each recipe that tells why each ingredient is used and what it does to make the final product better. All this info will help in adapting other recipes outside the book and understanding the principles of gluten free baking.     I trust America's Test Kitchen and trust that they have a great product. However I'm not a gluten-free person, I ordered it to see if I could make desserts for gluten-free other people. With my new Vitamix dry container, I was excited about making my own rice flour for the flour blend. Turns out the desserts (I looked specifically at cookies) last only a day or two before going stale. And it looks like several other of the gluten-free recipes are only best when eaten same-day. So I have not tried any of the recipes yet.
