    There were some good recipes, and info about fillers and flours in the book. The author uses buckwheat, oats and rice(brown) in her recipes. When I think of 'against the grain I think of items without those ingredients. I also think the author used regular/generic recipes to take up more pages towards the end of the cookbook. All-in-all I give a 7 score the book and 2 1/2 maybe a 3 for the book(it's the star rating above).

A big plus for me was that it has recipes that do not contain xanthan and guar gums. I don't like the texture resulting from those gums! Got kids?
