This knife is extremely sharp and holds its edge well. I'm kind of afraid of it--but so are the vegetables, which do not dare disobey me. Never before have I seen such meek obedience in green onions. They do as they are told. It is not difficult to cut them very finely and precisely. The relatively small amount of pressure necessary to cut prevents deformation, and deformation is what limits how finely something can be chopped or julienned. If you slice vegetables every day, you should do it with a good knife. This is a good knife.

This really is a wonderful knife, but some of the attributes that make it that way (the high carbon steel and the very fine edge) means that you have to be aware you can't treat it like other knives. YouTube has many videos showing how to use it. While mine hasn't chipped, just knowing that it 'could' makes me nervous when I use it. I don't really want to be thinking about that when I prep for meals. That being said, I'll get back to how great this knife is....... The "D" handle, the light weight and the balance makes this feel perfect in your hand. I understand that Shun offers a lifetime 'free' sharpening, but because I bought mine as a 'piece' from a set (without paperwork) I wonder if I can get that. What's also unclear to me is the turn around time. If it gets sharpened in Japan that could be a while. I've always sharpened my own knifes and have purchased a 'special' tool to handle the angle of this knife, so it's really a non-issue for me.
