The sweet helps to smooth out the heat — so it’s a light, clean hot that tastes really good. If you like it hotter, don’t hesitate to add fresh ground red pepper to your taste, if it’s too hot, just add a dash of brown sugar. Just mix it according to the included instructions. This kit includes all the seasoning and cure necessary for 20 lbs of jerky — conveniently divided into 5 lbs at a time batches.
