15 STARS!!! The essence of REAL New Orleans Food!!!!!!
I lived on the Gulf Coast for many years. Before returning to the North East I SEARCHED for cookbooks which most reflected the essence of the south. I chose the Junior League of Mobile, Alabama's Jubilee Cookbook and Rima & Richard Collin's New Orleans Cookbook. If I HAD to choose just one which I felt refelected the true south I would choose The New Orleans Cookbook.( although the West Indies salad in Jubilee is also to die for!!!) I have used almost every recipie in the book. The Shrimp Creole is to DIE for. I love and trust this book SO much that, as a Chef, I have felt confident enough in the author's competent portrayal of New Orleans food as it was prior to Emeril & Paul and all the hype that has followed to simply open the book and sell the concept of truly GREAT new Orleans food to a client. This book is the essence of the heart and soul of New Orleans. It is (in my humble opinion) the best cookbook that could have possibly ever been written about New Orleans food. I have strolled the streets eating red beans & rice with cornbread out of a styrofoam cup and have also dined in New Orleans finest restaurants. This book covers it all. Why did I decide to buy it? I have a 1st edition of this book which is very tired and I feared I would lose it or it would simply wear out before I found another copy. Thank you Rima and Richard Collin!!!! Classic NOLA Cuisine
This is by far the best of the widely accessible NOLA cuisine cook books that I have found in 30 years of cooking. "Old School" NOLA. The shrimp creole, gumbo, shrimp salad, and barbeque shrimp are to die for. :) Highly recommended.

Excellent cookbook, Great Eating!
Louisiana has some of the best cooks in America. This book is great lots of excellent recipes, breads, desserts, vegetable dishes and of course; lots of seafood recipes. This purchase is for me, but it would make a great gift for someone who loves to cook.
