I use yeast for much of my baking. It makes much better, and better flavored pancakes. For bread, use an egg in your bread dough and plenty of yeast, your whole wheat bread will rise nicely. Red Star is a reliable Ally. Don't be stingy with the yeast. And, no you don't need to wait a long time for yeast to rise, in pancake batter use warm batter and wait a few minutes to see bubbles forming on top. Can’t get yeast in the supermarket due to Covid19. If you bake bread a lot buying in bulk is good. The expiration date is not until 2022, as accurately quoted by the sell which is great! I read that Dry Active Yeast (not instant or bread machine yeast) can be frozen for long tern storage. I used a Food Saver and removed all the air and kept out what I would use over the next few weeks. Value per ounce as compared to the supermarkets is good.

No you can't get yeast at the supermarket and yes this is a lot of yeast, but the price was very fair on a per once basis and you can freeze yeast. You can also give some yeast to your neighbors who also can't find it in the supermarkets and that can make you very popular! I love Red Star yeast in 2 lb bag, I have used it for years as I bake a lot and use to get it as Cosco and Sam's club but they no longer carry it. I freeze it and it last for 2 yrs. at least.
