This thermistor did the trick.
I thought that the Global Shipping Program was a little pricey for a $20 item and it seemed to take loger than I expected however with a border crossing it's hard to see how long clearance would take. When tracking the shipment it appeared to take days even to get to the border though. The item is installed easy enough I did need to remove one back panel as the clip was hung up and I didn't want to force it through. Ultimately my problem was a wire to control board was burned off.

Worked Great
My old temp sensor of 5 years read 1,100. This one I purchased was 990 ohms. Which is the correct value. Make sure to run calibration on your LG. I used a multimeter to calibrate the temp in the oven.
