I'm working on making this sausage in small batches and have found that three rounded tablespoons is about right for three pounds of meat. I'm using very lean pork and the result is delicious. On my 2nd batch, I added some sage and cayenne since I like sausage pretty hot. Anyway, it's all been great with much less fat than store bought which means that I can eat sausage more often without worrying too much about artery clogging.
