Versatile and easy to sharpen!
I know a professional butcher who has used these knives for 30 years. They have a nice thin blade and are easy to sharpen. I like Victorinox steel. (This is our third knife). We use them for processing deer but then I noticed they were sneaking into the kitchen and showing up on the dining room table....

Tough knife, razor sharp.
Fine grain stainless steel takes a fine edge. Easy to sharpen, the blade is stiff but has some flex.. The steel is made by Wustof and is high carbon stainless. Always use with a cutting board. This is not a super hardened steel so it will dull with abuse but it's fine for meats and fish. Has a really nice balance and strong handle. The same company makes the famous Swiss Army knife. It is highly resistant to corrosion such as from salt water.
