First you'll probably notice that the block is very heavy and beautifully made (I was admiring it just as much as the knives)
The handles are full tang and feel great in the hand (the white scales are made of ABS so don't melt them)
The X50Cr15MoV steel is a first for me, so I gave it a try. It has a great sound to it that most knives don't have. Most knife, chisel, wood plane blade etc needs to be sharpened when you buy it. I was expecting this but was pleasantly surprised when they arrived nice and sharp. The edge bevel is nice and neat around the advertised 16 or so degrees. I normally use 16 degrees on my EDC S30V knives. The X50Cr15MoV takes an edge easily and cuts well. Edge retention isn't really long lasted but pleasant (LEARN TO SHARPEN YOUR OWN KNIVES PEOPLE! Its not hard to do, don't be in a hurry as it is therapeutic).
I'm considering using the paring knife as a light duty game knife, it's just beautiful too. I didn't expect to consider such a thing haha
Lastly, to the masses of people in this throw away culture....take care of your tools. Knives are meant to be sharp and that is your responsibility as a user. Don't let them get dull (use an appropriate cutting surface, not cast iron and glass). If they are put away dull, it's your fault. Who wants to grab a tool the next time it is needed just to have it under perform? Nobody.
I love using these knives and they make cooking more of a pleasure!
