amazing variety
I never knew there were so many wonderful breads in Italy. Each recipe had a lovely description and most some history. The best part is that most also have directions for making the dough by hand, by mixer and by processor. I thought making dough with a mixer was easy until I discovered the processor method. The process is a little different so the added specific information is very valuable. I originally took this book out of the library. When I marked the pages of recipes I wanted to copy I had so many I decided it would be better to just buy the book. The book has a newer edition but the old one is very similar and a better bargain if you can find it. I love this book for distinctively delicious Italian type breads and pizza and focaccia doughs. The recipes are spot on. It is my go to book for Italian baking including a pizza dough that I tested along several other excellent doughs with a college class. The recipe for pizza dough from the Italian Baker got unanimous votes for being the best pizza dough. That’s a conclusion with which I heartily concur.
