I have a LOT of knives. It is said that the first thing a good cook needs is a good knife, and maybe I'm just hoping enough knives will make me a better cook, but I have rarely met a kitchen knife I didn't like. To have them all professionally sharpened would cost a fortune, so I appreciate having a good sharpener at home. I have used lots of manual sharpeners: steels, whetstones, and others. All work to a certain degree. The Presto, however, is the best I've found so far. It is easy to use and comes with very good instructions. So far I've sharpened about 30 knives. Some had a great edge after one sharpening. Others, as the directions state, have taken several sharpenings. They have included everything from paring and utility knives to chef's knives, slicers, and cleavers. I immediately noticed the difference and how much easier they were to work with. This knife sharpener works! It is solidly made and attaches firmly to the surface. Once one develops the right light touch (you can't push down or it stops) you can get wonderfully sharp knives. So far I haven't seen too much scratching and the like to the sides of the knives.
