Each knife is made from razor sharp cryo-quenched German 4116 Steel, for ease of re-sharpening at work or in the field. Their handles feature a stiff Zy-Ex core on the inside for durability, with a softer, food-safe Kray-Ex exterior providing a comfortable non-slip grip for hours of use.
Compared to my Victorinox knifes:
The blade is sharper and the edge holds longer. It's no problem to chop tough vegetables like carrots for multiple servings and when you're done the blade still glides effortless trough tomatoes. Also it's heavier and therefore needs less effort to slice stuff.
However the build quality is slightly inferior – The one I received has a small gap between the handle and the blade – This could be a hygiene problem when used for meat and fish.
Of course it can't compete with a heavy $150.- chef knife made for the professional sector because it's lighter.
But overall it's a really great kitchen knife for your home and you can't find better for the price! It's now my favorite everyday knife and I am going to buy more as gifts for friends and family.
