These knives come from the factory with a razor sharp edge on them and hold an edge for a long time provided you don't use a glass or marble cutting board. They have also been easy to re sharpen using a very fine grit, good quality water stone when they do start getting a little dull. They are very well made, well balanced and lightweight.
