Paper filters, first and foremost, should not impart its own flavor and/or change the flavor of the coffee being brewed. The Technivorm Moccamaster filters are wonderful in that regard. What sets these filter papers apart from others that also pass the first test is I never have to worry about clogging issues should I dial in the grind to be more fine. The filters offer a nice clean cup even though they filter a bit faster than other brands. Being faster means I'm allowed to grind a bit finer. If I set my machine off of its automatic setting, I can play with bloom times and temperature without worrying of it clogging and making a big mess if I tweak the parameters too far. (I suppose I could go crazy and try an espresso or Turkish grind size to see if I could for it to clog, but overdoing it has never left me close to a disaster.)
