It is a wilde professional ferment need a lot of extra sugar during the fermentation I use only dark brown sugar high alcohol content before starting fermentation BRING THE ENTIRE SOLUTION TO PASTEURISATION TEMP.COOL IT THAN START WITH THIS FERMENT ANAEROBE FERMENTATION /IF TOO MUCH ALCOHOL IT CAN BE DILUTED WITH SPRING WATER OR SPARKLING WATER it can be improved with a tea made from elderberry flower/ over good ferment// G.Ferrari/

Very Fresh date code on package was 02/2022 and if stored in a refrigerator it will easily last another year in my experience. Be wary of products for lower prices when I asked them about the date code they new nothing about it. You get what you pay for and Hobby Home Brew has the Goods and my business from now on! A great Mead yeast
A great Mead yeast which feeds on the honey very well. It thrives on honey and yields pretty high percentage at about 18. Can be pushed further with some wit and tlc. Lees are compact and the yeast clears itself well. For those who want to impregnate a wooden stirring stick this yeast takes to it as well as baker's yeast. Store in fridge or freezer, bring to room temp them pitch. Instructions on the back of each packet.

Best yeast for wine
I’ve never had a batch of must not go into full bubbling fermentation with this yeast. This stuff is the best. It always works, and if you have a yeast that gets stuck, this takes it out of it quickly. I’ll use nothing else ever again but this yeast.

I'm a cider guy who makes apfelwein with relatively high ABV ~12%-15%. Works quickly, low (to no) foam. Attenuates to Zero (actually 0.099). Works very well for me.
