I love my Instant Pot ULTRA (admittedly not as fond of lower models I've used belonging to friends due to learning curve, but I'm sure they are good once you figure them out). The stainless steele liner is very important to me and the safety and ease of use, the speed of the cooking process, being able to have ONE appliance in place of many (this replaced rice cooker, slow cooker, pressure cooker, etc.). My challenge now is that I want more than one - think I'd like one of each size because of all I can do with them. I love that these don't heat up the house so badly with their well-insulated outter jacket. They are also very easy to use anywhere that has an electrical outlet ... including on the back patio to keep even more heat outside! I don't believe you can go wrong with and InstantPot Ultra! Unfortunately this product is not available in Australia, but if you really want one like my wife did, all you need is a 1000W 240V to 120V Isolated Stepdown Transformer (CAT.NO: MF1086) - Jaycar & its good to go for the Aussie power grid. If your not from Australia or the USA, all you need is this stepdown transformer, as it is rated up to 1000 watts which is what the Instant Pot can generate. As for the Instant Pot, well as soon as I come it to my wife and she followed the first use directions (cleaning), she cooked up a storm, making our chocolate steel cut oates, soy yogut, lunches, & dinners for the whole week. My wife is a health & Nutrition Coach at poweredbyvegies so she makes clients meal plans & now can offer actual meals! It has saved her abuot 3-4 hours of cooking time to make the same type of meals. The Ultra model is excellent and it fits my purpose since I make yogurt with long hours of incubation. With the ultra, you can sous vide foie gras and cook rice under pressure. I chose the Ultra because of the altitude adjustment. We live up in the mountains and it takes longer to cook everything because boiling starts at lower temperatures. Crockpots always take an extra hour or so. With the Ultra I don't have to fiddle with recipie times and temps anymore. It's portable with a locking lid so I don't have food sloshing all over when we travel down the rough winding road. I have 3 different sized Instant Pots and use them pretty much daily. I can set each one to a different function and delay so when I get back from the barn dinner is ready, (kept warm if I'm late) all at the same time. I've had a roast pressure cooking in one, beans slow cooking all day in another and vegetables steamed to perfection in the 3rd one.
