I did a lot of research on knives before purchasing. Steel type, blade edge, Japanese etc. This is a work tool. Excellent quality, Sharp and can be honed to make sure it stays that way. This knife has great handle ergos, blade shape, balance, and it takes a sharp edge. It feels AWESOME in hand. It is not great at edge retention. If you know how to steel/strop correctly to keep it sharp, this knife is every bit as effective in the kitchen as knives that are 10 times the price. Blade steel choice is always a trade-off between ease of sharpening and edge retention. This steel is relatively easy to sharpen - and needs a touchup often. Highly recommend (with caveat).

These knives are great I started with the 18" roast carver (a little over kill but not disappointed 16" would have been fine) and was so impressed that I bought the Bonner which I haven't used yet but I can tell it will impress me when I do and so I bought this one, just used it to cut potatoes NOT disappointed at all it cut them up like warm butter, I made a turkey and this will also slice turkey and I am sure roasts, these knives are sturdy and thin and can slice thin the real difference between as far as carving a turkey or roast than veggies is that the carving ones have the gratin (dents on the side so things don't stick) and the scope of these are more ideal for veggies because of the way they are shaped, these knives feel good and balanced in my hand they are sharp as a razor so be very careful. I saw the roaster on a test kitchen show and they use this brand so I just had to try them. I really don't think you can be disappointed I went with the Fibrox line only because these are the last knives I will buy and felt the wooden handle ones might show more ware but would have been very happy with even those. Oh it also did great slicing a big melon and taking the melon off the rind once again not disappointed From what I have read this particular one may not be made for the public in a year or two this is a professional chefs quality knife. This is a great 8" chef's knife. I really like the Fibrox non-slip handle. I have no hesitation in committing this knife to the top drawer of the dishwasher, The knife takes and keeps an excellent sharp edge - I give it a few strokes with a simple KitchenIQ 50009 Edge Grip 2 Stage Knife Sharpener every time I pick it up. I have several of these knives, and I have given one as a gift to each of my grown chidren. In addition to my Victorinox knives, I also have a full collection of Wusthoof Trident knives. The Wusthoffs have more "heft" than the Victorinox knives, and sometimes I will use the heavier knife for extensive chopping jobs, where heft and balance can improve performance. Otherwise, I always go to my Victorinox set. Buy one, and you'll never regret it!
