Used beef mince (prefer it to lamb), mixed in the spices and then gave it 20 hours in the fridge, covered. Fan oven 200C. 30 minutes later internal temperatures between 79C and 86C. Nice and moist, good flavour. Only negative - for my taste, the spice mix far too salty. Next time would use half the mix and pad it out with other spices from my cupboard.
