I worked with Judy at her flagship Union Hotel in the early80's and a cou[ple of brief stints at Zuni. She was lightning and encyclopedic in her knowledge of food and degustation, a nimble teacher, and a thorough critic and intellect. This volume is a fraction of what she held, but it is attended to as her offspring and conveys her exuberence and "paroxysms of glee" that graced her love of the art and her carrying the tradition of "serving it forth." I've happily given some 20 copies as gifts to newlyweds and students.

While a newbie cook/chef could learn from this work of culinary art, it's really aimed at those who have reached a certain level of proficiency in the kitchen and wish to learn more to help propel their creations to the next level. The writer, who died some time ago, poured herself into the descriptions so that you would not make the same 'errors" she made initially. Nothing fails, but some of the dishes need her special touch so that they really sing and you get the very most from the time and ingredients you've invested. You'll take a lot away from this if you learn anything. It's also a pleasure to read as Judy talks to you through her sentences. It's as if she's there with you. For the cook who thinks she or he has all the reference books they need.

There was NO cover on the book which was disappointing. The picture posted has a cover and it was not share that it was missing the cover. I’m not reviewing the book, but rather the product and description.
