Performance on the cheap.
Ok if you can't afford the new 9900K or don't have 2 grand in your pocket for a shiny new Skylake or 10 grand for the Xeon Scalable line ( or you just don't want to seeing (back) over to AMD) then these processors are the ticket. A tick away from the generation of Sandy Bridge processors they are regarded as the generation that made a mark in the performance ranks. It is snappy. Slices through video and audio with little effort. Xeons are built to last.
