Very good quality grain. I bake bread with it. I also use it to make starter for making the bread rise. My bread turns out dense, thick and heavy like the bread I use to get when I lived in Austria/Germany. Einkorn has a slightly sweeter taste than regular wheat and/or spelt. The grains are smaller than spelt and have less gluten. Makes a very hearty, good tasting bread. This is an ancient grain... not modified like modern wheat.
