    This will teach you the basic seasonings in Chinese sauces.

    This is a replacement for a book I gave to a person learning how to cook. This book has dishes familiar to most Westerners as well as new dishes presented in a simple format. They have pictures of the ingredients and techniques to prepare for example how to score a squid. I trust all the Wei-Chuan cookbooks to get the flavors right and I have many of their cookbooks for that reason and because they keep it simple. There is nothing I dislike about this book; while I won't be making every recipe in this or any cookbook the section on sauces I can use to create my own dishes with what I have on hand which really is the secret of Chinese home cooking.

    Title Says It All!

    EXCELLENT BOOK FOR THE CONSTANTLY EVOLVING COOK. This is a great book for fundamentally GOOD Chinese cooking. The recipes are both familiar and unfamiliar. They represent items that we would order from a very good Chinese restaurant and the dishes our Chinese friends would cook for us as their mothers had taught them to cook. The instructions are clear and concise and the flavor of the food when it's made is so good that I don't feel the craving for good Chinese food I would normally get from so-and-so Take-out. Really have to look up more recipe books from this publishing company!

    I love this book it is like having my grandpa around again to teach me!

    My family was in the Chinese restaurant business for 25 years. I took for granted the restaurant was always there. So when the place sold. I had to learn to cook Chinese. I found this book a few years ago. It was like having the restaurant back. I love Chinese Cooking Made Easy so much I loaned it out which was eventually lost. So when I saw it on Ebay I was so elated! I will keep this copy and may need to buy another! One for me and one to loan.
