This book was given to me on permanent loan by my now former mother in-law when I was married, and it didn't end up in my stuff when I moved earlier this year. The fact I hunted this down on eBay to once again have it in my collection shows you how much I enjoyed this book and still do. Say what you will about Jeff Smith personally, he was passionate about food and it showed in his writing, in his often irreverent and informal tone throughout the book it is as though he is welcoming you into his own very eccentric world. His travels colored his writing with his frequent references to the places he'd discovered various recipes in, the various people he'd acquired them from, and lends a personal touch to this book, this very informative and detailed book. This is an enormous collection of recipes, history, and cultural information presented with the attitude that "credit must be given!" to the ancient cuisines of the world that informed the Europeans throughout the centuries to the modern era. After reading this, you will understand just why he feels this way, and just why the French didn't invent everything as far as high cuisine. The recipes are clearly laid out with ample detail and are easy to follow, having cooked several already and had them turn out just fine. Each different cuisine--Roman (Italian), Greek, and Chinese--features extensive historical information about each culture and the innovations they came up with that made their cooking special, and each section of the book, divided up into various food groups and dinner types ("Appetizers", "Beef", "Poultry", etc.) features a brief introduction to set the tone and give even more information. In short, you cannot come away from this book without learning something every time you open it. This book is enjoyable for that exact reason, the fact that so much love for the subject has gone into it, it radiates from every page bright and clear. If you like to cook at all and want to try something new and exciting, this jam packed book is well worth your hunting it down. I bought this book years ago when I was dating a Greek and wanted to cook for him. The Tiropita recipe stunned his father who said he hadn't eaten cheese pies like that since he was in Greece. These recipes are as authentic as you can get without going to Greece! I haven't tried the Italian or Chinese recipes, but I'm sure they are just as good. This copy was purchased for a friend to add to her collection. Enjoy!
