This is my go-to for simple home cooked meals. My first volume was gifted to me in 2006, the year my son was born. Before that I was single and only knew how to make dinner party food and cookies for my annual cookie exchange party. Suddenly having to make meals everyday for my son & his dad was an ordeal. I thought I knew how to cook, but quickly realized that I needed a better reference. I recently moved out of state and retired my old one because pages were stained, stuck together, tabs had come off from use, and I tossed it (it was wrecked beyond donating.) A month after we moved here my son wanted to make banana bread. The Joy of Cooking was on the shelf and we thought we might try that recipe. It went...okay, I guess. My teenage son and I made it twice. He gently asked where the Red Cookbook was and looked utterly dismayed when I told him I had tossed before our move. The look of relief on his face when he sees the replacement ATK Family Cookbook on the shelf is everything. This title is kitchen tested, includes sensible recipe variations, produces consistent good results. If there is an extra step, you can be sure there is a reason for it. The recipes are easy to understand, focus on widely available ingredients, and yield reliable results. The ring binder format lays pages flat and the index is easy to access. Featuring more than 1,200 kitchen-tested recipes, 1,500 photographs (color a change for cook's illustrated) and no-nosense equipment and ingredient ratings. I have not had this book long, but I love it (as I knew I would before it came in the mail). Cook's Illustrated always puts out Great cookbooks. All the equipment and ingredient ratings are priceless. Before I found cook's illustrated I can not tell you how much money I waisted on useless equipment, gadgets and ingredients. They take all the guess work out of buying. I do not think there is anything worse than preparing a meal or a great desert to have your equipment, gadget or ingredient ruin it or make the task harder. I have never had one of thier product ratings not live up to thier review. The reviews of products are just PRICELESS. Things I have tried in this book and loved - Classic Tuna Fish - I have never made it the way they did. Yummy! Classic Egg Salad - Again I have never made it this way and again Yummy! I love this cookbook. It is a must-have for anyone just learning to cook and also those who have been cooking forever. It explains the differences in knives and when to use each type, it shows the differences between types of cooking equipment and even has a page on mincing. chopping and slicing so the user understands what those cuts look like. The book is then divided into 24 different sections that cover just about any basic food preparation and recipe plus some that the experienced cook may have just forgotten. It has good recipes for everything from salad dressings and dips to sandwiches, stews, fish, meats and poultry, cookies, desserts of all kinds, sauces, beverages and more. Additonally, something I thought was great, was the addition of a section on grilling and another on slow cooker and pressure cooker recipes. So much is covered in this book that every kitchen should have it as its Bible. This is one of the finest all around cook books available today. Most anything you want to prepare in the kitchen is covered not only in words but pictured and explained from their test kitchen. I have enjoyed my copy, so had to get one for a new granddaughter recently, to insure her success in the kitchen. To coin an old phrase from my mothers time, the way to a mans heart is through his stomach.
