    uncomplicated, unpretentious

    This is a nice little bread book with 54 recipes. Chapters include: World Heritage Breads, Savory Flavors, From My Kitchen Angel(no breads in this chapter; just 5 comfort food rustic recipes), Pastries and Doughnuts, All Good Grains, American Classics, Delights of Chocolate, and Fresh-Baked Breakfast. There are alot of little side notes with comments about the recipes from Father Dom, as well as helpful hints. Most of the bread recipes have 2 recipes; one for hand or machine-kneaded, and one for the bread machine, so they are easily adaptable to both. The feel of his teaching is much how he lives his life as a monk; uncomplicated and unpretentious. There are several flours represented in his recipes from basic strong white, whole wheat, to blue cornmeal, rye, and Amaranth. Nice ...
