I bought this book because I had used recipes from the author's later book and this was the original. Yamuna Devi did a 10 year study of India's cuisine to write this book. Some of the recipes are complex and new techniques have to be learned, but I have enjoyed it all. For me it's just fun to read the history and background and play with some of the recipes. I am a "mostly vegetarian" for health reasons, and I am also an old fashioned gourmet who loves to eat. I am always looking for great tasting and unique food, and this book provides a great deal of it.
This book is so immense it covers hundreds of vegetarian Indian dishes and has a concise appendix of terms and ingredients. It would also make a decent door stop!

This is one of my favorite all time cookbooks. The breadth and scope of the recipes as well as the food is of incredible importance. I have used these recipes for large and small parties with great results. My Indian friends tell me the food is amongst the very best they have ever eaten.
