      sharpener !

      I cannot get this so called sharpener to make any difference to my Sabatier knives which I purchased a few months ago. I have tried the course and the fine grinders but it seems to make no difference to the sharpness of the blade. The instructions do not help as they do not tell you how much pressure should be used or angle of the knife as the grinders seem to be fixed at an angle and do not rotate so as they wear you will put a wrong angle on the cutting edge and it is so easy to damage the blade. Just insufficient advice. Because I know you can ruin a quality knife with these sharpeners I am afraid to use it to much in case I damage the blades a video of how to use it would be helpful, in the meantime I am cutting my food with increasingly blunter knifes I have purchased several so ...

      Sabatier Knife Sharpener/Hone

      I have purchased a number of sharpeners and butchers' steels over the years and this item is without doubt superior, faster and safer. I have a fantastic set of "James Martin" Sabatier knives which after being resharpened on this Sabatier tool require only three or four strokes on the hone to bring them back to perfection.. It is a first class tool.
