This CCK KF 1402 cleaver is made with strong steel and has a decent edge to it. While it has been downsized for home use, the user must exert more force to cleave through parts of a roast chicken or duck. It comes down to having enough mass in the blade that other cleavers have. The metal is strong and does not bend or deform, but the user must use more wrist and hand strength to accomplish the same task. Claim that KF1402 is used commercially seems doubtful.
