  • Great Knife at a moderate Cost

    I've used many Chef knives over the last 30 years. Some that I have used cost over $200. Of course I have also used knives that cost less than $20. The difference between a good knife and a bad knife is huge. A bad knife is usually light and unbalanced. The blades are flimsy and difficult to maintain an edge. A good knife will have weight and is balanced. The blade will be of forged steel and with a sturdy blade that holds a finely honed edge. It should keep its edge when used on appropriate surfaces and be easy to maintain the edge. The J.A. Henckels Chef Knife is as good as any top tier knife I have ever used. I would highly recommend the German made or Spain assembled knife to anyone looking for a top of the line knife at an affordable cost. ps..I have never used the China assembled knife. So can't attest to how good it is or what 'quality control' it is assembled under.

  • Take it slow if you are used to using lesser quality knives

    After much research on kitchen knives i came across this gem of a knife. I wanted something that was an effortless kitchen cutter and was good quality and great value. This checks all those boxes easily. It's very well built, great weight and balance and super sharp. I'm familiar with using uch lesser quality chinese steel knives, and I was used to how they work, this gives you no room for error, aka on my old knifes, i could hit skin and unless I was pushing weight into it, it wouldn't cut me, this knife will cut you.. BAD.. If you aren't using a correct form while cutting. Almost lost a tip of my left index finger the second time i used this, i was cutting up parsley and putting no weight into the blade and it went to the bone like a hot knife through butter. This is an exceptional value and great quality. IF you want it to stay this level of sharp, use a steel before each use and cut on a wood cutting board, it will stay sharp for a long time. Also hand wash and dry after each use.. Never dishwasher.
