Cinnamon has an amazing variety of health benefits, but, Cassia, the most common type, also contains coumarin, which, per WebMD, "can harm your liver and increase the risk of developing cancer." Occasional users don't have to worry, but I use cinnamon daily on my bran flake/fruit/nonfat Greek yogurt concoction, and Ceylon has much lower levels of coumarin. Buying Organic Way's bags is a whole lot less expensive by the ounce than buying Ceylon in a spice jar.
