    Well organized, well tested recipes so if you follow instruction you will have an outstanding results. They have included a discussion of types of meats, flavors, costs etc along with best products- both consumable and utensil. I refer to these books more than I do to rest of my 2,000 cook book collection. Their series are made for the serious cook.
