Okay...I have to admit it, I am not the worlds best cook!! I can bake and will make the occasional cake or bread, whip up a curry or a soup....and...that's about it! Thank goodness for a hubby who loves to cook!! However, this book changed things somewhat!! You can create deeply complex tasting dishes, that look fit for the most extravagant of dinner parties...with ease and the minimum of work!! The term Naked Chet refers to the nickname earned by this British Chef...rather than refer to kitchen attire, or , it refers to his style of cooking! Everything from ingredients to preparation, cooking to serving, is stripped back to bare essentials making it easy to cook, while retaining the essential flavor of the food you are working with! The book begins with a little information about Jamie's background followed by some veru useful cooking basics: First Moves is a small chapter that contains a list of basics no kitchen should be without such as oils, pulses, seasonings, flour etc; this is followed by a couple of pages on herbs and spices together with a list of the basics everyone needs to have. The book is divided into 10 main chapters covering soups, salads, pasta, fish, meat, desserts....all your basics while also devoting chapter space to some more unusual topics such as Risotto and Couscous! There are also has a smaller section at the end covering sauces...including a great recipe ofor aioli which is hard to find and different stocks and dressings you can prepare! Standouts for me include Cod with parsley, capers and brown butter, seared Tuna steak with coriander (cilantro) and basil, and the Squash risotto with Thyme and Mascarpone is out of this world...and no dish is to complicated or time consuming to prepare!!
